I hadn’t had pasta in months! The cauliflower pasta in my Balanced Pantry Box caught my eye. Lower carb than a regular pasta – check! This was my first time trying an alternative pasta and it was love at first bite!
1 (227g) package of cauliflower pasta from @gogoquinoa (or your fave)
1/2 red onion
2 cloves of garlic
1 red pepper
1 yellow pepper
¼ cup crumbled feta cheese
¼ cup of sweet roasted peppers @solenzifood
1 cup cherry tomatoes
¼ cup sliced Kalamata olives
2 tbsp olive oil
1 tbsp oregano
Salt to taste
Pepper to taste
2 tbsp lemon juice
Boil pasta according to directions on package and drain well.
Finely chop all veg, mince garlic and place in a bowl along with olives and sweet roasted peppers.
Add oregano, salt, pepper and olive oil.
Squeeze in lemon juice and zest it up.
Add your feta.
Drop in your pasta.
Mix well and refrigerate overnight if you can resist.
