No-Bake Energy Balls

Kids will love to help make these easy, no-bake energy balls! They’re vegan, and gluten-free (if using gluten-free oats), so they’re a crowd pleaser. Try them today 🙂

Ingredients:

½ cup Barney Butter Smooth Almond Butter

⅓ cup Be Sweet Vegan Honey Substitute 

½ tsp vanilla extract

1 cup oats

¼ cup unsweetened shredded coconut, toasted

2 tbsp chia seeds

¼ tsp ground cinnamon 

¼ tsp ground nutmeg

Pinch of salt

¼ cup chocolate chips

Directions:

  1. In a microwave-safe bowl, combine the Barney Butter Smooth Almond Butter and the Be Sweet Vegan Honey Substitute and microwave for 30 seconds.
  2. Stir in the vanilla extract, then add the oats, coconut, chia seeds, cinnamon, nutmeg, salt and chocolate chips.
  3. Stir until well-combined, then refrigerate for 30 minutes.
  4. Remove from the fridge, and use a 1 tbsp cookie scoop to scoop the mix and roll into balls.
  5. Enjoy!
