Ingredients:
- 2–3 Persian cucumbers (or 1 English cucumber), thinly sliced
- 1 tsp salt
- 1 clove garlic, minced
- 1 tbsp soy sauce
- 1 tsp fish sauce (optional but adds incredible depth)
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp gochugaru (Korean chili flakes) – adjust to taste
- 1 tsp toasted sesame seeds
Instructions:
- Salt the cucumbers.
In a bowl, toss sliced cucumbers with salt. Let them sit for 10–15 minutes, then gently squeeze out excess water. This step helps the cucumbers stay crisp and allows the dressing to soak in beautifully. - Make the dressing.
In a separate bowl, whisk together garlic, soy sauce, fish sauce, rice vinegar, gochugaru, and toasted sesame oil. - Toss and top.
