INGREDIENTS (serves 4):
- 4 large bell peppers, any color, tops cut off and seeds removed
- 1 lb lean ground turkey or beef
- 1 cup cooked brown rice or quinoa
- 1 can (14oz) diced tomatoes, drained
- 1 cup black beans, rinsed and drained
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- ½ cup shredded cheese of choice (optional)
- Fresh parsley or cilantro to garnish
INSTRUCTIONS:
Step 1 — Prep your peppers Preheat your oven to 375°F. Slice the tops off your bell peppers and remove the seeds and membranes. Place them upright in a baking dish and set aside.
Step 2 — Cook the filling In a large skillet over medium heat, brown your ground turkey or beef until cooked through. Drain any excess fat. Add the diced tomatoes, black beans, cooked rice or quinoa, garlic powder, cumin, smoked paprika, salt and pepper. Stir everything together and cook for 2-3 minutes until combined and heated through.
Step 3 — Stuff and bake Spoon the filling generously into each pepper. Top with shredded cheese if using. Cover the baking dish with foil and bake for 30 minutes. Remove the foil for the last 5 minutes to let the tops get golden.
Step 4 — Serve and enjoy Garnish with fresh parsley or cilantro and serve immediately. Store leftovers in an airtight container in the fridge for up to 4 days.
