This Kimchi Jjigae, or Korean Kimchi Stew, is fiery, bold, deeply flavorful, and full of gut-loving ingredients that do more than nourish the body. It’s a dish that feeds the soul. Every bite is warm and grounding, with the fermented tang of kimchi, the depth of umami from doenjang and gochujang, and a spicy little kick that wakes up every cell.

🧡 Soul-Warming Kimchi Jjigae Recipe
Serves: 2–4
Time: 30–40 minutes
Ingredients:
- 1/2 pound pork belly, sliced thin (or substitute a can of tuna for a traditional twist)
- 1–1.5 cups well-fermented kimchi (the older the better!)
- 1/2 onion, sliced
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 tbsp gochugaru (Korean red chili flakes)
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp doenjang (Korean fermented soybean paste)
- 1 tbsp mirin (rice wine)
- 1 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1–2 cups mushrooms (shiitake, enoki, or whatever you love)
- 2–3 cups water or broth (anchovy broth is traditional, but veggie or chicken works well too)
- Cooked rice to serve
Instructions:
- Sauté the aromatics.
In a heavy-bottomed pot, add a splash of sesame oil. Sauté the pork belly until golden and lightly crisped. Add garlic, onion, and ginger, and cook until fragrant—about 2–3 minutes. - Build the base.
Stir in the gochugaru, gochujang, and doenjang. Let it sizzle for a minute to unlock the flavor. - Add kimchi and liquids.
Stir in the kimchi, mirin, soy sauce, and water or broth. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes. This is when the magic happens—deep flavor, rich aroma, healing steam rising from the pot. - Toss in mushrooms.
Add mushrooms and simmer for another 5–10 minutes until tender. - Finish with sesame oil.
Just before serving, drizzle in a little toasted sesame oil for that final touch of warmth. - Serve with love.
Spoon over warm Castor River Rice and top with optional green onions or a soft poached egg if you’re feeling extra cozy.
