INGREDIENTS (serves 4):

For the cookie dough:

  • 1 cup cottage cheese, drained
  • ¼ cup honey or pure maple syrup
  • ¼ cup almond butter or natural peanut butter
  • 1 tsp pure vanilla extract
  • Pinch of sea salt
  • ½ cup mini dark chocolate chips (optional but highly recommended)

INSTRUCTIONS:

Step 1 — Drain the cottage cheese Place your cottage cheese in a fine mesh strainer over a bowl and gently press with a spoon to remove excess liquid. This step is important — it gives your cookie dough a thicker, creamier texture rather than a watery one. Let it drain for about 5 minutes.

Step 2 — Blend until smooth Transfer the drained cottage cheese to a food processor. Add the honey or maple syrup, almond butter, vanilla extract, and sea salt. Blend on high for 60-90 seconds until the mixture is completely smooth and creamy. Scrape down the sides halfway through to make sure everything is fully incorporated.

Step 3 — Fold in the chocolate chips Transfer the blended mixture to a bowl and fold in the mini dark chocolate chips. This is optional but adds the perfect texture and that classic cookie dough experience. Use dark chocolate chips for a cleaner option with less sugar.
